Tea Production Method

The crafting of Zhengshan Xiaozhong follows traditional methods:

  1. Hand-Picking: The tea is made from tender leaves harvested from high-altitude tea gardens.
  2. Withering: The leaves are withered over pine wood fires, which infuse the tea with its signature smoky aroma.
  3. Rolling: The leaves are rolled to release their natural oils, enhancing flavor development.
  4. Oxidation: The tea undergoes full oxidation, creating its rich, deep flavors.
  5. Drying: Finally, the leaves are dried over pinewood fires, intensifying the tea's unique smokiness.

This process results in a tea with dark, twisted leaves and a robust flavor that balances smokiness with sweetness.

Brewing Instructions

To savor the bold flavors of Zhengshan Xiaozhong:

  • Water Temperature: 90-95°C (194-203°F).
  • Tea Quantity: Use 4-5 grams of tea leaves for 150 ml (5 oz) of water.
  • Brewing Time:
    • First Infusion: Steep for 20-30 seconds.
    • Subsequent Infusions: Gradually increase steeping time by 10-15 seconds for each infusion. The tea can be steeped 4-6 times.
  • Serving: Use a porcelain or glass teapot to enjoy the tea's amber-red liquor and smoky aroma.
