Tie Guan Yin, or "Iron Goddess of Mercy," is one of China's most famous oolong teas, originating from Anxi County in Fujian Province. Renowned for its floral aroma and smooth, creamy texture, Tie Guan Yin offers a well-balanced flavor profile with sweet, floral, and slightly vegetal notes. Tea Production Method

The production of Tie Guan Yin involves several complex steps:

  1. Hand-Picking: Tender leaves and buds are harvested during spring and autumn.
  2. Withering: The leaves are withered under sunlight and indoor conditions to reduce moisture.
  3. Shaking and Oxidation: Leaves are lightly shaken to bruise the edges, promoting partial oxidation while retaining the tea's green core.
  4. Rolling: The leaves are tightly rolled into their characteristic pellet shape.
  5. Roasting: Depending on the variety, Tie Guan Yin may undergo light or medium roasting to develop its distinct aroma and flavor.

The result is a tea with tightly rolled leaves and a bright green to golden liquor, offering an aromatic and flavorful experience.

Brewing Instructions

To enjoy the rich flavor of Tie Guan Yin:

  • Water Temperature: 90-95°C (194-203°F).
  • Tea Quantity: Use 5-7 grams of tea leaves for a 150 ml (5 oz) gaiwan or teapot.
  • Brewing Time:
    • First Infusion: Rinse the tea leaves with hot water, then steep for 10-20 seconds.
    • Subsequent Infusions: Gradually increase steeping time by 5-10 seconds with each infusion. This tea can be steeped 6-8 times, with evolving flavors in each brew.
  • Serving: Use a gaiwan or a traditional clay teapot to highlight the tea's floral aroma and smooth texture.
